the tequila game okay how do you think I
should get started best thing to do
while you're experimenting and trying to
figure out what your palette is and what
kind of cocktail is going to be your
go-to is to work through what I like to
call the progression

first step is we're going to use a
Blanco tequil and a Blanco tequila is
right out from the distill process into
the bottle nothing fancy you have
Reposado Reposado comes out through the
same process and it's going to be aged
anywhere from two months to maybe a year
then you have your anejos your anejos
they're going to sit in a barrel a
little longer it can be anywhere from
you know a year to three years and then
that's going to take on properties of
what either was in that Barrel or the
barrel that it's sitting in it's going
to take on some properties a little
differently than these two you go into a
bar and you don't know what to order you
want to Tequila cocktail before you
order that tequila cocktail it's going
to be helpful to know what it really
tastes like right so here's a little
test for you this is Blanco nothing
fancy right out of the bottle just sip
that and tell me what you think
it's going to clean your house it
definitely burns on my tongue and my
throat exactly this is what we call neat
you're not going to drink Blanco out of
the bottle neat you will however
consider drinking other Tequilas a
little bit softer a little bit more aged
like Daniels and like the ectroniejos
you probably would consider sipping a
meat but for this purpose you just had
it that way right now Watch What Happens
what we're going to do is chill this up
okay so this is yours your lips were on
it let's go right back in here
I'm just gonna chill it up a little bit
tell me
if you notice
okay this is just chilled Blanco chilled
it's watered down it's colder okay it's
colder this ice part it masks the burn a
little bit right so it's broken down
it's easier for you to sip and if you
wanted to you can enjoy it probably that
way not much flavor though because this
is what it is it's tequila it's a great
base the blanco is a great base for
making cocktails so through the
progression here Watch What Happens I'm
gonna change my ice out
you sip a little water in between
cleanse it up
okay you don't have to gargle same thing
little Blanco
have the ice
so far nothing different right nothing
different than what I just did no
nothing different so far
it's not done yet watch this this is
just the lime I'm just gonna Rim the
glass with the lime I'm not putting it
in it's Blanco it's chilled and it has a
lime Rim now try that
yeah what do you think what's the first
sip lime good good so now you just
changed the blanco which was hot heat
out of the bottle chilled it different
taste now you have lime on on your lip
I'm distracted by the lime to even taste
the burn which way was more palatable
for you did you like it when it was just
chilled or you like it with a little
lime well I'm not a big fan of lime so I
would go regular Blanco chilled okay
okay I guess I could see something like
that that's cool that's fine that's good
that you know that right very very good
that you understand that if someone says
to you do you want to do a shot of
something and they say we're gonna do a
shot of Blanco and it comes with a lime
and no no thank you I don't like that
that's cool pass on that all right make
another progression forward Blanco
squeeze line
all right it's gonna be lime juice well
then you pick the wrong Spirit to do
this regression test with didn't you hey
we should do like Coke syrup or
something yeah
nice up
shake this up Blanco ice chilled and
lime juice
if I add cointro to this or Triple Sec
you get your margarita
but we're not doing that
now we're going to serve this as if it
was just a cocktail
so this is just lime juice it's just
lime juice your Blanco tequila served
with ice
what do you think about lime I can
appreciate it if I was a lime lover so
now one further here in the final step
of this if you don't really love lime
you don't have to put lime in it but
those are again important things that
you have to understand you're trying to
have somebody make you a cocktail all
right we could take this and I can cut
it I'm going to put some soda some
Seltzer on here in this case Okay
tequila and Club you're gonna stir
seltzer water just want to mix it I
didn't shake it okay
the bubbles help for sure okay that
progression from very neat to having a
little bit of a lime rim to having lime
juice doesn't have any lime squeezed in
it with some bubbles on it some Seltzer
or club soda that changes the whole
profile of this drink so now you know
from your start if this is a place that
you're going to go or not if you didn't
love any of this because it had lime in
it or you didn't love any of this
because it was too much of a burn then
you need to stay away from tequila and
you want to stay away from maybe then
the Blancos if you want to try an
upgrade and something a little softer
then you get into the reposados you get
into the anejos does that make sense any
sense to me cheers I guess we drink them
